Mango Berry Crumble Recipe

I thought this would be a great raw dessert fro summer!

Fruit:
2 cups diced mango
2 cups diced strawberries
2 cups blueberries
Extra handful strawberries

  • Blend the handful of strawberries smooth.
  • Toss all the ingredients together.
  • Spread the berries into the bottom of a 9"x 9" pan.

Crumble:
1 cup walnuts
1/2 cup pitted, packed dates
1/2 cup shredded coconut
1/3 cup ground oat groats
1/4 tsp. pure vanilla extract
Pinch of salt

  • In a food processor, grind all ingredients together into a crumbly, yet moist texture.
  • If you want the mixture to press together a bit better, add a few teaspoons of water.
  • Evenly spread the crumble over the berries.
  • Serve immediately, chill for a few hours, or dehydrate for a few hours until warm.

My first vegan energy drink! (Vega sports)

So this morning I tied my first vega energy drink and it was great! After I drank it I went out and mowed the yard and went for a run and I still have energy. There's no crash at all and it tastes awesome (I had the lemon lime one)! I'm really grateful for Vega sport, I used drink all kinda of awful stuff like Red Bull and Monster but now there's a healthy vegan alternative that still gives me the energy I want. Thanks Vega Sport. Get ready for more reviews next week as I head down to the lake for a week of skiing, I can't forget my Vega!!!

Vega Sport

Yesterday I got a package in the mail from Vega Sport, a vegan sports energy drink company. They sent me six packets of two flavors Acai Berrya and Lemon Lime. This week we will be reviewing their product! Thanks Vega Sport for working with us!


Smoothie of the Day!

I actually got this juice recipe (so I guess it's not technically a smoothie) from my cousin Missy in Tennesee. I also think it could be a great bloody mary mix.
4 tomatoes
1 garlic clove
4 stalks of cellery
4 whole carrots
cayenne pepper
himalayan pink salt
a dash of cumin

Lunch Time!

If I were in the U.S. right now this is for sure what I would be eating! I'm craving it so bad. Blanched milkweed flowers! Doctor those little guys up with a pinch of salt, a crack of pepper, and a little dollop of butter, and you're looking at an awesome summer lunch!

Curry Coated Chocolate Truffles

So I don't know how many of you know this but I am a huge huge fan of Frank Giglio. He is my favorite chef of all time and I would kill to meet and learn from him. For now however I'm going to have to settle for trying his incredible recipes and letting them make weak in the knees with how absolutely amazing they are!!!

Ingredients:
2 cups hemp hearts
14 dates
1 tsp Frank's Finest Vanilla Powder
3 Tbsp cacao powder
1/4 tsp Maine Sea Salt
1/4 cup cacao nibs

Procedure:
Put the hemp, dates, vanilla, cacao powder, and sea salt in a food processor.
To start blend using the PULSE button then once ingredients start to combine, blend on high until mixture begins to stick together.
Test mixture by squeezing a ball in your hand, if the mixture sticks together, your done, if its a bit too crumbly then continue to mix.
Once desired consistency is achieved, fold in the cacao nibs.
Scoop out small portions and roll into a ball. Roll the balls in cacao powder, cinnamon, nibs, coconut, or even Frank's Finest Curry Spice Blend.
Place in the fridge to set up a bit before serving.
